Homemade roast veg soup
Ingredients:
200 g sweet potato
500 g butternut squash
100 g carrot
1 red pepper
2 tbsp olive oil
1/2 tsp salt
1/2 tsp pepper
1 litre water
Directions:
1. Peel and cut up into large chunks all the veg. Put in roasting tin - add olive oil and cook in oven (180) for 40 mins.
2. Once cooked, blitz up with blender, adding water until required consistency.
