Roast Potatoes

These are the best raost potatoes I have ever made. Very Easy
Ingredients:
2 kg potatoes
4 tablespoons olive oil
1 teaspoon mixed herbs
1 teaspoon salt
Directions:
1. Preheat oven to 200 c / 400 f Gas mark 6.
2. Place an oven tray into the oven.
3. Peel and chop potatoes
4. Place into slightly salted boiled water.
5. Boil for 5 minutes.
6. Drain.
7. Pop back into the pan.
8. Add the olive oil, herbs and salt.
9. Put the lid on the pan and shake roughly, the potatoes should be evenly coated and a little bashed.
10. Put onto the hot oven tray.
11. Pop into the oven for 40 minutes turning at least twice.
12. They should be very crispy!
