This dish from Gaudelope is a Caribbean cousin of Limpin' Susan, a dish from South Carolina Lowcountry. Serve it with fish, chicken, or pork. Ingredients:
2 teaspoons olive oil |
2 cups thinly sliced okra (1/2 pound) |
3 cups water |
1 1/2 cups uncooked long-grain rice |
1/4 cup minced green onions |
2 tablespoons minced fresh parsley |
1 teaspoon minced fresh or 1/4 teaspoon dried thyme |
1 teaspoon minced seeded habanero pepper or 2 teaspoons minced seeded jalapeño pepper |
1/2 teaspoon salt |
2 garlic cloves, minced |
Directions:
1. Heat oil in a large saucepan over medium-high heat. Add okra; sauté 4 minutes. Add water and remaining ingredients; bring to a boil. Reduce heat; simmer 15 minutes or until rice is done. |
