This dish from Gaudelope is a Caribbean cousin of Limpin' Susan, a dish from South Carolina Lowcountry. Serve it with fish, chicken, or pork.
Ingredients:
2 teaspoons olive oil
2 cups thinly sliced okra (1/2 pound)
3 cups water
1 1/2 cups uncooked long-grain rice
1/4 cup minced green onions
2 tablespoons minced fresh parsley
1 teaspoon minced fresh or 1/4 teaspoon dried thyme
1 teaspoon minced seeded habanero pepper or 2 teaspoons minced seeded jalapeño pepper
1/2 teaspoon salt
2 garlic cloves, minced
Directions:
1. Heat oil in a large saucepan over medium-high heat. Add okra; sauté 4 minutes. Add water and remaining ingredients; bring to a boil. Reduce heat; simmer 15 minutes or until rice is done.
