Rita's Polenta Lasagna

This recipe comes from my cousin Rita, and is a great alternative to ordinary lasagna. It is very easy to make and very tasty! I happen to be a do-it-ahead type, so you can make the meat/marinara mixture ahead and put it in the fridge until your ready...so simple and quick to throw together!
Ingredients:
16 ounces prepared polenta
1 medium zucchini
12 ounces cooked ground italian sausage (chicken or turkey is great)
1/2 cup fresh basil leaf, thinly sliced
1 (32 ounce) jar marinara sauce
5 -6 slices provolone cheese
2 cups mozzarella cheese, grated
2 ounces parmesan cheese, grated
Directions:
1. Slice the polenta and zucchini into 1/4 slices; set aside.
2. In seperate bowl, add cooked sausauge, add basil, and marinara sauce, mixing well.
3. Arrange half of the polenta over the bottom of large skillet; top with half of the sausage mixture.
4. Layer provolone, zucchini, and mozzarella over sausage mixture.
5. Top with remaining polenta and sausage mixture.
6. Cover and cook over medium high heat approx 8 - 10 minutes or until sauce is bubbly and cheeses are melted.
7. Remove skillet from heat.
8. Sprinkle grated parmesan cheese over lasagna and let stand, uncovered, approx 2 - 3 minutes.
9. Garnish with remaining basil.
