I came up with this recipe one day, when I wanted something spicy and easy to make. I let everyone add their own Cajun seasoning as my daughter does not like spice. Serve with a salad and garlic bread and supper is ready in a half hour.
Ingredients:
2 boneless skinless chicken breast halves
1/4 cup olive oil
1/4 cup chopped green pepper
1 small onion, chopped
1/2 teaspoon celery seed
1/2 teaspoon cajun seasoning, to taste
1 (28 ounce) can diced tomatoes
1 (10 1/2 ounce) can tomato soup
Directions:
1. Chop chicken in 1-inch cubes.
2. Fry in olive oil in a large skillet until cooked.
3. Add onion, peppers, garlic and celery seed.
4. Fry for a couple of minutes.
5. Add tomatoes, soup and Cajun seasoning.
6. Simmer for 20 minutes.
7. Serve over hot cooked pasta.
8. Enjoy!
