Risotto w/ Italian Sausage, Onions & Bitter Greens

Ingredients:
4 cup(s) chicken broth
1/2 cup(s) water
2 teaspoon(s) olive oil
2 cup(s) chopped onion (1 large onion)
2 teaspoon(s) sugar
8 ounce(s) sweet turkey italian sausage casing removed
1/4 cup(s) shallots chopped
1 cup(s) risotto rice
1/3 cup(s) white wine
2 cup(s) baby arugula leaves
3 tablespoon(s) romano cheese grated
1 teaspoon(s) lemon rind grated
Directions:
1. Step 1: Bring brother & water to a simmer in medium sauce pan, don't boil. Keep warm over low heat.
2. Step 2: Heat olive oil in large sauce pan, medium high. Add chopped onion and sugar. Saute until onion is golden and set aside
3. Step 3: Add sausage to pan, saute until browned. Add Shallots and saute 2 minutes. Add Rice saute 30 seconds. Stir in wine until liquid is absorbed. Add 1 cup broth stirring constantly until absorbed. Add remaining broth 1/2 cup at a time. Stirring until absorbed prior to adding more. Remove from heat. Stir in onion, arugula and remaining ingredients.
