Risotto Tuna Salad

A wonderful cold salad perfect for brunch or potluck.
Ingredients:
1 box risotto pasta (cook as directed on box)
2 cans tuna fish (drained)
1/4 cup mayo
1/2 cup favorite balsamic vinegarette dressing
1 cucumber peeled and chopped
1 cup chopped carrots
3 cups chopped celery
1 cup chopped green onion
1 can rinsed garbanzo beans
fresh ground pepper and salt to taste.
prepare pasta
rinse pasta and beans
in a separate bowl
mix tuna, mayo, dressing, salt, pepper, and chopped veggies.
stir in pasta and beans.
refrigerate for 1 hour before serving.
