An easy dish to prepare the night before, so you can enjoy the morning with your family while it bakes in the oven. My daughter hates eggs, but loves this - the rosemary does the trick
Ingredients:
10 eggs
milk (3 cups)
shredded cheese (1 cup, or more if that suits you)
bulk sausage (1 lb) (remove from casings if using regular sausage)
mushrooms, several sliced
2 tsp rosemary (can substitute basil, oregano, thyme - but if you have anyone who doesn't really like eggs, rosemary should be the way to go)
1 tsp veggie seasoning
enough day-old bread (white, whole wheat, whole grain) to completely cover the bottom of casserole dish
Directions:
1. Brown sausage meat, adding mushrooms just as meat browns up (no more pink) and cook until mushrooms softened
2. Meanwhile whisk eggs in large bowl, add milk and whisk some more
3. Grease casserole dish, and lay out day-old bread to cover bottom of your casserole dish, cutting pieces until covered entirely, throwing a couple of slices on top for good luck
4. Spread sausage meat/mushroom mixture over bread
5. Spread cheese over meat/mushroom mixture
6. Spread Rosemary (or oregano/basil/thyme substitute) and seasoning over everything
7. Add milk/cheese mixture
8. Cover and keep in fridge overnight
9. In morning, take out of fridge, to take off chill while pre-heating oven to 350 degrees
10. Bake for about 45-60 minutes, until egg is set in center
