Ingredients:
1 cup (2 sticks) unsalted butter, room temperature
2 cups sugar
1 small carton ricotta cheese
2 eggs
3 teaspoons vanilla
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon grated lemon zest
4 cups flour
glaze
1 cup confectioners' sugar
2 to 4 tablespoons milk
3 drops almond extract
Directions:
1. Preheat oven to 350 degrees.
2. Mix ingredients into a sticky dough.
3. Drop by teaspoons onto ungreased cookie sheets.
4. Bake 10 minutes, or until bottoms are brown.
5. To make glaze:Put confectioners' sugar into a saucepan. Stir milk, a few drops at a time, along with the almond extract, into the sugar and stir over low heat until completely dissolved.
6. Drizzle over cooled cookies.
7. Makes about 4 dozen.
