Ricotta Puffs

In flavor and appearance, these tempting puffs can pass for doughnuts - but they're plumped up with protein rather than calories. Recipe makes about 3 1/2 dozen puffs.
Ingredients:
8 ounces ricotta cheese (about 1 cup)
3 eggs
1/4 cup granulated sugar
1 cup all-purpose flour
4 teaspoons baking powder
1/4 teaspoon salt, optional
oil for frying
powdered sugar
Directions:
1. In a large bowl, combine ricotta, eggs and sugar. Blend smooth.
2. In another bowl, stir together flour, baking powder and salt.
3. Add dry ingredients to wet, beating until the batter is smooth.
4. Pour oil into a deep pan to a depth of about 1 1/2 inches. Heat to 360-degrees F.
5. For each puff, drop a rounded teaspoon of batter into the oil.
6. Cook several puffs at a time, but do not crowd the pan.
7. Cook, turning occasionally, until golden brown, about 1 1/2 minutes.
8. Adjust the heat as needed to maintain the oil temp at 360.
9. Lift out cooked puffs with a slotted spoon.
10. Drain well on paper towels or brown paper.
11. If made ahead, let cool, then wrap airtight and refrigerate.
12. To reheat, arrange puffs in a single layer on a rimmed baking sheet.
13. Place in a 350-degree F oven until heated through (about 10 minutes).
14. Dust with powdered sugar and serve warm.
15. Per puff: 48 calories, .74 grams protein, 5 grams carbohydrate, 3 grams total fat, 20 milligrams cholesterol, 59 milligrams sodium.
