Ricotta Pie Aka Torta Della Nonna

A marvelous Italian lemon cheese pie.
Ingredients:
3/4 c flour
3 t sugar
1 1/2 t grated lemon peel
6 t butter
1 egg yolk, slightly beaten
1/4 t vanilla
1/2 c sugar
3 c ricotta cheese
3 egg yolks
2 t flour
1/3 c golden raisins
3 egg whites
Directions:
1. Crust: stir together flour, 3 T sugar and 1/2 t lemon peel. Cut in butter till crumbly. Stir in egg yolk and vanilla. Pat 1/3 of the dough onto the bottom of an 8 or 9 springform pan (sides removed). Bake at 400 degrees for 7 minutes or till golden, cool. Butter sides of pan; attach to bottom. Pat remaining dough onto sides of pan to height of 1 1/2 .
2. Combine ricotta, 3 egg yolks, 1/2 c sugar, 2 T flour and remaining lemon peel, beat till creamy. Stir in raisins. Beat egg whites till soft peaks form, fold into cheese mixture. Pour into pan. Bake at 350 degrees for 45 to 55 min or till knife inserted comes out clean. Cool, remove sides.
