Delicious and easy ricotta cookies with a powdered sugar glaze. Recipe from Chris White
Ingredients:
2-1/4 c flour
1 tsp baking powder
1 tsp baking soda
1/8 tsp salt
1/2 c unsalted butter,softened
1 c sugar
1 egg
1c ricotta cheese
1 tsp vanilla
glaze
2 c confectioners sugar
3 tbs milk
Directions:
1. Cookies: Heat oven to 350 degrees. Coat 2 baking sheets wit cooking spray. Whisk flour,baking powder,baking soda and salt together.
2. Beat butter and granulated sugar together till blended. Add egg,ricotta and vanilla,beating till combined
3. On low speed,add flour mixture and beat till blended. Drop by tablespoonfuls onto prepared pans. Bake for 14 mins or till lightly browned around edges. Let cool on sheets 3 mins.,then remove to rack to cool completely.
4. Glaze: Beat confectioners sugar and milk together till well blended. Dip tops of cookies into glaze and set aside till glaze has hardened.
