Ricotta Cheesecake

Ingredients:

  • 4 cups (30 oz) ricotta cheese
  • 1 tbsp cornstarch
  • 1/3 cop finely chopped almonds

Directions:

  1. Preheat the oven to 325 degrees F
  2. Drain the Ricotta Cheese of liquid
  3. In a large mixing bowl, beat the ricotta with sugar until it is light and fluffy
  4. Add the eggs, constarch, and almond extract
  5. Add the cream to the mixture, along with the almonds
  6. Pour the mixture into a deep baking dish prepared with crumb crust (seperate recipe)
  7. Bake for about 1 hour, or until done
  8. Turn off oven and prop door open and allow the cake to cool to room temperature
  9. Chill until ready to be served
  10. Hint: Adding some almond extract to the crumb crust recipe would make it a nutty yummy touch!
