Easy to make cheesecake with fruit on top
Ingredients:
2 tsp butter, softened
1/4 cup wheat germ
3 eggs
3 cups ricotta cheese
2/3 cup sugar
1/3 cup sugar
1/3 cup corn starch
1 tsp baking powder
1 tsp vanilla
3 tbsp melted and cooled butter
2 tsp grated lemon peel
2 cups fresh berries
Directions:
1. spread the 2 tsp butter over bottoma and sides of 9 inch cake pan with removable bottom, then sprinkle with wheat germ. set aside.
2. In food processor or blender (or mixing bowl), combine eggs, cheese sugar, and sour cream. beat until smooth (or whirl).
3. Stir together cornstarch and baking powder; add to cheese mixture along with vanilla, 3 tbsp melted butter and lemon peel. beat until well blended.
4. Pour into prepared pan and bake 325 for 1 hour, or until a knife inserted in the center comes out clean. Let cool on a rack, then cover and refrigerate until cold.
5. to serve, remove pan sides. arrange some of the fruit on top.
