This cheesecake takes only 15 mins to prepare. Delicious. From Martha Stewart Living!
Ingredients:
1-1/2 lbs whole milk ricotta cheese,pureed in food processor
6 egg yolks
6 egg whites
1/4 c all purpose flour
finely grated zest of 1 orange or 2 lemons
1/4 tsp salt
6 tbs sugar
Directions:
1. Preheat oven to 375 degrees.
2. Generously butter and sugar 9 springform pan(3 deep)
3. Whisk together ricotta cheese,egg yolks,flour,zest and salt in large bowl.
4. In another bowl,whisk 6 egg whites with a mixer on low speed till foamy. Raise speed to high,and gradually add 6 Tbs. of sugar,whisking till stiff,glossy peaks form 3 to 4 mins. Gently fold a third of the whites into ricotta mixture using rubber spatula until just combined.
5. Gently fold in remaining whites till just combined.
6. Pour batter into pan and bake until center is firm and top a deep ,golden brown,about 1 hour.
7. Let cool on wire rack for 10 mins. Run a knife around edge of cake;release sides to remove from pan and let cool completely.
