Ricotta Cheese Apple Pie

Made with ricotta and sweet tart apples, it is a creamy twist on an apple pie. Kind of like having the ice cream goodness baked in the pie.
Ingredients:
9 inch pie shell
3 cups thinly sliced granny smith apples
1/4 cup of sugar
1/2 teaspoon of nutmeg
1/3 teaspoon of cinnamon
2 eggs, beaten
1 cup of reduced fat ricotta
1/2 cup of sugar
1/2 cup of heavy cream
1/2 teaspoon of salt
1 1/2 teaspoon of grated lemon rind
Directions:
1. Mix 1/4 cup of sugar with cinnamon and nutmeg.
2. Toss with apples.
3. Place apples in pie shell.
4. Combine eggs, ricotta, 1/2 cup of sugar, cream, salt and lemon rind.
5. Mix.
6. Pour over top apples, covering evenly.
7. Bake at 425 degrees 10 minutes,
8. Then 350 degrees for 30 minutes.
9. Cool 10 minutes. Enjoy with a drizzle of caramel sauce if you dare!
