Ricotta Balls

This goes well with pasta or vegetable dishes. Or canbe a Main lunch dish.
Ingredients:
ricotta balls ingredients
1 pkg. frozen chopped spinach
1 1/2 cups ricotta cheese
2 eggs
1 cup seasoned bread crumbs
1/4 cup parmesan cheese
1/4 cup chopped onion
1/2 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. nutmeg
1/4 tsp. pepper
1 tsp. basil
1/2 cup flour ( for rolling ricotta balls )
sauce ingredients
4 italian sausages removed from the casing. ( sweet or hot sausage )
1 onion chopped
1 garlic clove
1 tsp. garlic salt
1 1/2 cups beef bouillon or 1 1/2 cups beef broth.
1 15oz can of tomato sauce
3/4 cup dry red wine
1/2 tsp. oregano
large sauce pan with 2” of water
Directions:
1. Mix all the ingredients Ricotta balls ingredients together.
2. Form mixture into balls about an inch round and roll in flour. Place all the ricotta balls in a bowl and place in refrigerator for 1 hour or longer.
3. Sauté the sausage and onion.
4. In a medium sauce pan add beef bouillon, tomato sauce, dry wine, and oregano, bring to a simmer for 5 minutes.
5. In the large sauce pan bring the 2” of water with the garlic clove and garlic salt to a boil.
6. Drop ricotta balls in water, reduce heat to a simmer. When the ricotta balls rise remove about 5 minutes. Add them to the sauce heat for 5 minutes now it is ready to serve.
