Ricotta and Fresh Chive Bread (Bread Machine)

Delicately flavored and best eaten fresh. Serve with pasta dishes.
Ingredients:
1 cup water
1/3 cup ricotta cheese (whole or part-skim)
3 cups bread flour
1 tablespoon light brown sugar
1 tablespoon gluten
1 1/2 teaspoons salt
1/2 cup chopped fresh chives
fresh ground black pepper, a dash
2 1/2 teaspoons fast rising yeast (or 1 t. bread machine yeast)
1 1/3 cups water
1/2 cup ricotta cheese (whole or part-skim)
4 cups bread flour
1 1/2 tablespoons light brown sugar
1 tablespoon gluten, plus
1 teaspoon gluten
2 teaspoons salt
3/4 cup chopped fresh chives
fresh ground black pepper, a dash
1 tablespoon fast rising yeast (or 1 t, plus 1/2 t. bread machine yeast)
Directions:
1. Place all the ingredients in the pan according to the order in the manufacturer’s directions.
2. Set crust on medium and program for the Basic cycle; press Start.
3. When the baking cycle ends, immediately remove the bread from the pan and place on a rack.
4. Let cool to room temperature before slicing.
