This is my husband's recipe for a 1 1/2 lb loaf of Pannettone. We like to give to friends & family during the holiday season. Makes great french toast or serve warm with a little butter!
Ingredients:
3/4 cup warm water
1/4 cup butter
2 eggs
1 1/2 tsp vanilla extract
3 1/4 cups bread flour
2 tbsp sugar
2 tbsp dry powdered milk
1 1/2 tsp salt
2 tsp bread machine yeast
1/4 cup dried mixed fruit (dates, cranberries)
1/4 cup rum soaked raisins
2 tbsp slivered almonds
2 tbsp orange zest
Directions:
1. Place all ingredients in order =EXCEPT FOR CHOPPED FRUIT, RAISINS, ALMONDS & ORANGE ZEST= into bread machine.
2. Select sweet or basic/white bread cycle and use the medium or light crust color setting.
3. Add chopped fruit, raisins, almonds & orange zest when the raisin or nut signal starts OR 5-10 minutes before the last kneading cycle ends.
4. Makes great french toast or serve warm with a little butter. Enjoy!
