Rich Lighter Chocolate Pudding

Ingredients:
1/3 cup(s) unsweetened cocoa powder
1/3 cup(s) sugar
2 tablespoon(s) plus 1 1/2 teaspoons cornstarch
2 cup(s) low-fat milk
1 teaspoon(s) vanilla extract
Directions:
1. In a medium saucepan add first three ingredients. Gradually stir in milk and cook over medium to medium low heat, gently stirring until the mixture boils. Be careful not to over cook and don't use a wisk or it will not thicken. Take off the heat and gently stir until mixture becomes smooth. This will only take about 30 seconds. Let mixture cool for 5 minutes then stir in vanilla. Pour into four 1/2 cup serving dishes.
2. Optional: almond extract or cinnamon give this pudding an interesting flavor.
