Rich French Toast

We like anything breakfasty for an easy dinner and, after much trial and error over the years, decided this is our favorite way to make French Toast!
Ingredients:
2 large eggs
1/2 cup milk (see note)
about 1 t. sugar
1/4 teaspoon ground cinnamon
few drops of vanilla extract
6 slices french or italian bread, cut 3/4-inch thick
about 6 tablespoons butter, divided (no substitutes)
Directions:
1. Whisk eggs in a shallow bowl. Add milk and whisk to combine. In a small bowl, combine sugar and cinnamon. Add to egg mixture and whisk to combine (making a cinnamon/sugar mixture first helps it incorporate easier without clumping). Whisk in vanilla.
2. Melt 3 T. butter in a large skillet over medium heat, being careful not to burn it. Working with one at a time, place bread slices in egg mixture and let sit about 3-5 seconds on each side (you don’t want it to sit so long it gets soggy). Pick up each slice and let excess egg mixture run off. Place eggy slice in skillet (I can get 4 slices at a time in my stainless steel skillet) and cook until the bottoms are nicely browned. Turn slices over and cook other side until nicely browned, adding more butter as needed. Serve immediately and top with syrup.
3. Note: My husband is lactose-intolerant, so I use lactose-free milk when making this and it works just fine (Dairy-Ease from Land O' Lakes or Lactaid are available in most major grocery stores). For an even richer version, use half and half instead of milk. There is usually plenty of egg mixture leftover, so if you need to make one or two more servings, you can easily do so without doubling the recipe.
