My wife’s mother gave me a Breville Breadmaster bread machine for Christmas. This is a seriously up market item. Actually, she got it last year for Christmas but could never make it work. She swore it was broke but said I could have it if I could fix it. Read more . It wasn’t and isn’t broke. Tis an ill wind that blows no man some good. I love it. I used to make special bread about once a month and now I just make it when we need bread. The bread we get from the bakery here is quite good but it’s basic, and there are no options. I love real French Baguettes, Pain de Campagne, real sourdough & like that and now they are no work at all. Want pizza dough, Egg noodles, pie crusts, etc? The Breville does most, if not all of the work. You didn’t really need to know all of that, did you? Try the bread anyway.
Ingredients:
• 2/3 c milk, room temperature
• 2 eggs, room temperature
• 2 t butter, softened
• 1 t salt
• 1 1/2 c bread flour
• 1 1/2 c all-purpose flour
• 2 t sugar
• 1 packet yeast, (2.5 tsp.)
Directions:
1. By Hand or with Food Processor
2. 1. Dissolve yeast in a little of the milk, warmed a bit, with a pinch of the sugar until it blooms, about 10 minutes.
3. 2. Meanwhile, Put all of the dry ingredients in the mixing bowl and mix together well.
4. 3. Add the milk, eggs, butter & proofed yeast and mix until a nice ball is formed.
5. 4. Kneed this, by hand or machine until it’s smooth and elastic, about 8-10 minutes.
6. 5. Put the ball in a lightly oiled bowl, cover with a cloth and let it rise until double in size. This takes about 30 minutes, depending on temp.
7. 6. Punch it down & kneed a few more times.
8. 7. Roll it out, roll it up, pinch off the ends and fold under.
9. 8. Put it in the bread pan and bake at 350o F (175o C) for 25 – 30 minutes.
10. 9. Place it on a rack to cool.
11. In a Bread Machine
12. I. Place all of the ingredients in the bread machine in the order called for in the manufactures instructions.
13. II. Turn on the bread machine.
14. III. Key in the instructions.
15. IV. Place on a rack to cool.
16. In either case, you can brush egg white on the crust for a glazed look or a bit of olive oil for a soft crust.
