Ingredients:

  • 1/4 lb giblets
  • 2 cups uncooked rice , long grain *(i used jasmine rice)
  • 1/2 cup butter
  • 4 1/2 cup chicken broth
  • 1 tsp allspice
  • 1/4 tsp cinnamon
  • 1 - 2 tsps salt
  • 1/2 cup almond halves or chopped walnuts
  • 1/4 cup dried cranberries (optional)
  • note: instead of using a regular long grain rice, i used a long grain american jasmine rice called jasmati. i love the flavor of this rice and have been using it in place of regular long grain rice.

Directions:

  1. Completely cover the giblets with water and boil until tender. Skim the fat from the top as it forms. Once the giblets are tender, remove them and reserve the broth. Cuth the giblets into small pieces and set aside. Next, rinse the rice in cold water and then drain. In a large pan, saute' the onions in butter until they are tender. Add the rice and continue to saute' for a few minutes. Measure the giblet broth and add enough chicken broth to equal 4 1/2 cups. Add the seasonings, whole garlic clove, 1- 2 tsps of salt to your broth according to your taste. Stir into the rice mixture and cover the pot, bring to a boil and cook for 20 minutes on a medium heat. Add the almonds, or chopped walnuts, raisins, (dried cranberries if you are using) and giblets. Stir gently with a fork and simmer for an additional 10 minutes.
  2. Pour onto a flat platter, heaping the rice in the center, sprinkle with cinnamon, browned pine nuts and chopped parsley to garnish.
  3. Note: This is great for buffets or parties. Turkey giblets may be substituted for the chicken giblets. You could also garnish the top of the rice with slices of chicken and then sprinkle with cinnamon. In the picture I provided it is one serving.
