Rice & Sausage Stuffed Zucchini

Ingredients:

Directions:

  1. Preheat oven to 350.
  2. Brown sausage til fully cooked, remove from heat.
  3. Mix in rice, tomatoes, onion, cumin, turmeric, and parsley.
  4. Cut zucchini lengthwise and scrape out seeds and some of the flesh with a spoon.
  5. Fill zucchini with sausage rice mixture.
  6. Bake for 40 min or until zucchini is tender.
  7. To speed things up, you may boil or microwave zucchini to precook.
  8. Garnish with parsley and green onion.
