Good summer salad-but yummy year round
Ingredients:
1 c julienne sliced cooked chicken
1 c cooked rice
1/4 c minced onion
2 tbl salad oil
1 tbl vinegar
1/4 tsp hot sauce
2 tomatoes finely sliced
1 sm head lettuce finely shredded
1/2 c mayonnaise
1/4 to 1/2 tsp curry powder
2 c corn chips
Directions:
1. Combine all ingr. except corn chips
2. Toss lightly
3. Fold in mayonnaise and curry
4. Turn into a chilled bowl and top with corn chips
5. Chill
