Wonderful addition to salad menus. Easily replaces potato salad and great for potlucks. Taste and texture wonderful.
Ingredients:
4 cups cooked long-grain rice
8 radishes, sliced
4 hardboiled egg, chopped
1 medium cucumber, chopped
2 cups celery, sliced small
1/2 cup chopped onion
1 1/2 cups mayonnaise
2 tablespoons mustard
3/4 teaspoon salt
Directions:
1. In a large bowl, combine all ingredients and mix well.
2. Cover and refrigerate at least one hour.
