Rice Pizza Crust

This is a great way to dress up rice in a kid-friendly way with more appeal than a casserole. Recipe from Grandma H.
Ingredients:
3 cups uncooked rice
3 eggs
1 cup parmesan cheese
1 green pepper, chopped (optional)
Directions:
1. Grease 2 large sheetcake pans.
2. Cook rice according to package directions. Cool.
3. Add remaining ingredients and mix well. Chill.
4. Pat rice mixture into bottom of pans.
5. Top with pizza sauce and favorite toppings: meat, mushrooms, cheese, etc.
6. Bake at 450* for 45 minutes.
