Rice & Pea's from My House to Yours!

This is my familys favorite rice dish. It goes great with Jamaican Pot Roast, Roasted Pork or Chicken. You can combine your beans if you like, we like to use a combination of dry pigeon peas, black eyed peas and red kidney beans, what ever is on hand.
Ingredients:
8 ounces pigeon peas, canned, drained
8 ounces black-eyed peas, canned, drained
2 cups water
1 (13 1/2 ounce) can coconut milk
1 teaspoon garlic salt
1 onion, sweet, large, diced
2 green onions, diced
1 tomato, large, diced (optional)
1/2 teaspoon sea salt
1 teaspoon black pepper
1 1/2 teaspoons thyme, fresh
1 teaspoon sweet paprika
1/4 habanero pepper, small, finely chopped (optional)
2 cups long-grain rice
Directions:
1. Combine the beans, water, coconut milk, garlic, sweet onion, tomatoe, salt, pepper, thyme, paprika and habanero in a covered medium-size pot, mix well and bring to a boil.
2. Once a rapid boil is achieved add in the rice and green onion.
3. Mix well and simmer on low heat until the rice is tender and all the liquid has evaporated, about 15-20 minutes.
4. Fluff the rice with a fork and serve with meat and gravy.
