Ingredients:

Directions:

  1. Assemble everything you will need.
  2. Please note, in photo I have added a splash of soy sauce inside each roll.
  3. A bowl large enough to dip the rice paper on filled with hot water
  4. A clean dish towel
  5. Vegetables all cut and ready
  6. Crab cut into long skinny pieces
  7. Water Chestnuts
  8. Avocado
  9. Crab
  10. Rice paper rounds
  11. Vermicelli and Cilantro
  12. A parchment paper or waxed paper lined tray
  13. Take one of the Rice paper rounds and soak it in the hot water for 5 to 10 seconds until soft. Lay on dish towel. Arrange ingredients, order not important, just line them up and finish with the vermicelli and cilantro.
  14. Tuck paper over ingredients, then fold sides in, then roll up. Doesnt have to be super tight, just keep everything nice and together inside and let the rice paper do the rest. Place seam side down on parchment paper. Continue until you have used all the ingredients. I usually have more of one thing or another left near the end, so just make up the rolls with whatever I have.
  15. Cover with saran wrap and store in fridge until ready to serve.
  16. Assemble dip ingredients, whisk and place in dipping bowl.
  17. Enjoy!
