Rice Paper Rolls

These are my kids (and ours!) new favourite food! They are healthy and delicious, and can be made ahead and kept in the fridge until you are ready to serve.
Ingredients:
12 rice paper sheets
1 carrot, cut into ribbons
1 red capsicum, cut into strips
200 g shaved ham or 200 g smoked salmon
1 avocado, sliced
2 spring onions, cut into strips
4 mushrooms, thinly sliced
sweet chili sauce, to dip
soy sauce, for dipping
thai barbecue sauce, for dipping
Directions:
1. Soak the rice paper for 30 seconds in warm water.
2. Arrange a selection of the listed ingredients in the centre of the paper.
3. Fold the edges over, then roll into a log.
4. Serve chilled, with a selection of dipping sauces.
