Rice Pancakes

This is a great way to use left over rice!
Ingredients:
2 cups cooked rices (cooled)
2 eggs
1/2 t. garlic
1/2 small onion, chopped finely (about 1/2 cup or so)
pepper to taste
2 t. butter or margaring
shredded cheese, sour cream and/or ketchup if desired
Directions:
1. Mix rice, eggs, garlic onion and pepper in a bowl. Mix it very well
2. In an electric skillet or large fry pan, melt 1 T. butter or margarine
3. Drop rice mixture onto melted butter by about 2 heaping Tablespoon fulls and pushing it down so it looks like a flat circle-like patty. (I can generally fit about 4 patties in my rectangular electric skillet) leave plenty of room for flipping.
4. Cook on medium heat for about 3-4 minutes a side, or until it browns, then flip with a wide spatula. (pancakes are fragile, so the wider the spatula, the easier it will be to successfully flip them)
5. Cook other side for about 3-4 minutes or until browned.
6. Serve warm
7. Shredded cheese can be sprinkled on the top if desired. Also, sour cream is good on these. Ketchup is another option (since they are much like hash browns or potato pancakes).
