A really good way to use leftover rice. Everyone loves them!!
Ingredients:
1 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
3 tablespoons soft shortening or 3 tablespoons liquid oil
1 cup cold cooked white rice
1 egg, beaten
1 1/4 cups milk
1/2 cup cubed cheddar cheese
Directions:
1. Sift dry ingredients togther. Cut in shortening or stir in oil. Add rice, egg, cheese and milk; mix enough to moisten dry ingredients.
2. Grease muffin tins. Fill muffin tins 3/4 full. Bake 425 degrees for 25 minutes.
