Rice Flour Crepes

Ingredients:

  • 1 3/4 cups milk
  • 3 eggs
  • 1/2 tsp salt
  • 1 cup rice flour
  • 3 tbsp rice flour
  • 2 tbsp butter
  • 2 tbsp butter
  • 1 tbsp sugar

Directions:

  1. Put milk eggs salt sugar in blender blend.
  2. Add rice flour
  3. Blend.
  4. With blender running add stream of melted butter.
  5. Let batter rest at least 1 hour
  6. At room temp or 12 hours in frig
  7. Blend just before making as it tends to separate
  8. Heat skillet and put in a little butter pour in 1/4 cup batter and swirl around.
  9. Cook
  10. Repeat if you are going to freeze them put some wax paper between so they dont stick together.
