A friend brought this to potluck at church and I asked for the recipe. It's such a great alternative to potatoes
Ingredients:
2 cups cooked rice (not instant)
2 eggs
1/2 cup oil
1/2 pound velveeta cheese (cubed)
2 cups milk
1 onion chopped (or 3 tablespoons dried onion)
1 cup parsley chopped (or 2 tablespoons dried)
1 teaspoon garlic powder
salt to taste
Directions:
1. Mix all ingredients in a large bowl
2. Pour into an 8x8 baking dish
3. Bake covered for 30 minutes at 350 degrees
4. Uncover and bake for an additional 15 minutes
