Fast easy salad for summer evenings.
Ingredients:
1 (15 ounce) can black beans, rinsed,drained
1 1/2 cups chopped tomatoes
1 1/2 cups cooked rice
1 (3 1/2 ounce) package crumbled reduced fat feta cheese
1/2 cup celery, chopped
1/2 cup green onion, chopped
1/2 cup italian dressing
2 tablespoons fresh cilantro or 2 tablespoons parsley, chopped
Directions:
1. Mix all ingredients.
2. Refrigerate.
3. Serve.
