This is a simple, filling casserole. It is vegetarian, but you don't have to be one to enjoy it. Perfect if you have a home herb garden or just love summer veggies. Great reheated in the microwave.
Ingredients:
1 c. rive, steamed until just done
2 lb. zucchini, cooked, chopped and drained
1 c. grated cheddar cheese
1/2 c. thinly sliced green onions and tops
1/3 c. fresh parsley, chopped
3 eggs, beaten slightly
dash of rosemary
dash of garlic powder
Directions:
1. Combine all ingredients in a 12x8x2 inch greased casserole.
2. Bake at 350 degrees for 1 hour.
