My mom grew up in the 20's when money was tight. When they didn't have a lot to buy a lot of food, you had to make do.This was a meal that got them by. I was raised eating this not because we couldn't afford food, just cause it taste good. Read more . Some times we have it for dinner.
Ingredients:
cooked rice (can be leltover rice,plain or flavored, instant or regular rice)
8 eggs
salt and pepper to taste
butter or margarine
Directions:
1. Place hot cooked rice on plate, put some butter on rice.
2. Fry 2 eggs per serving, salt and pepper to taste,place on top of rice.
3. You can also top with cheese, salsa, green chilies, or anything you like.
