We looked forward to this every spring when our rhubarb was finally up when I was growing up on the farm! Great cold or warm! Great on ice cream or on its own...
Ingredients:
8 c fresh rhubarb, chopped
1 1/2 c sugar
1 c small pearl tapioca
1 1/2 c water
Directions:
1. Combine all ingredients in a slow cooker.
2. Cover and cook on low for 2 to 3 hours. Chill or serve warm.
