So wonderful. Moist. Delicious. Easy and Quick. What more could you ask for?
Ingredients:
1/4 cup water
1 1/2 teaspoons cornstarch
1/3 cup sugar
1/2 cup sugar
15 oz fresh rhubarb, chopped ('3 cups)
1 cup cake flour
1 3/4 teaspoons baking powder
1/2 teaspoon salt
1 large egg
1/2 cup whole milk
1 stick (1/2 cup) butter, melted and cooled slightly
1 teaspoon pure vanilla extract
Directions:
1. See website for complete directions, but basically:
2. Oven 400, butter 8x8 glass pan
3. Simmer rhubarb, 1/3 c sugar, water, cornstarch for ~3 min. and pour into pan
4. Mix dry ingredients in smaller bowl
5. Mix wet ingredients in larger bowl
6. Gradually add dry ingredients to wet ones while mixing
7. Pour into pan on top of fruit and spread out
8. Bake 25-30 min, until toothpick comes out clean (don't stick it all the way down to the fruit of course)
