Rhubarb on the Simple

Based on a recipe from Paula Boyer Rougny’s book, Happiness Is A Kitchen in Maine. She says her friend “Gretchen serves this in stem dishes with cookies on the side.” Cook time doesn’t include time to cool to room temperature.
Ingredients:
2 lbs rhubarb, cleaned, trimmed, cut into 1 inch pieces
1/2 cup water
1 lemon, zested
1 cup sugar
Directions:
1. Combine all ingredients in saucepan set over medium heat. Cook 6 or 7 minutes or until tender.
2. Cool to room temperature.
3. Puree in a blender or food processor.
4. Spoon into individual dishes.
