It's rhubarb time finally! This recipe comes from a 1982 cookbook and is one of those old fashioned yet delicious cakes mom used to make. Moist and yummy.
Ingredients:
2 eggs, beaten
1 1/4 c sugar
1 tsp soda
1/2 tsp salt
2 c flour, all purpose
1 c sour cream
2 1/2 c fresh rhubarb, diced finely
crumbs
1 c sugar
1/4 c flour
1/4 c butter
Directions:
1. Mix together all cake ingredients, adding rhubarb last.
2. Pour into greased and floured 9x13 pan
3. Mix to crumble the crumb ingredients and sprinkle over top of batter.
4. Sprinkle liberally with cinnamon and bake at 350F for 45mins.
5. It smells wonderful and tastes even better.
6. P.S. Don't worry if your crumbs don't hold there shape while baking; it still tastes great.
