Interesting cake using rhubarb and sour cream.
Ingredients:
1 cup sour cream
1 cup sugar
1 egg
11/2 cups flour
1/2 tsp salt
1 tsp baking soda
2 cups rhubarb, cut into 1/4 pieces
topping
1/2 cup brown sugar
1/2 cup chopped nuts
1 tsp ground cinnamon
Directions:
1. Preheat oven to 350ºF.
2. Combine sour cream, sugar and egg; mix thoroughly.
3. Add dry ingredients; mix well.
4. Fold in rhubarb.
5. Pour batter into a 9 x 13 baking pan coated with cooking spray.
6. Combine topping ingredients and sprinkle evenly over batter.
7. Bake 30 minutes or until tested done.
