Ingredients:
2 cups rhubarb, cut in 1/2-inch pieces
1/2 cup sugar
1/2 cup shortening
1 1/2 cups sugar
1 egg
2 cups flour
1 teaspoon baking soda
1/2 teaspoon vanilla
1 teaspoon cinnamon
1 cup buttermilk
Directions:
1. Mix rhubarb and 1/2 cup sugar; set aside. Cream shortening, sugar, and egg. Mix and add dry ingredients, alternating with buttermilk. Add vanilla and rhubarb mix. Grease and flour a 9x13 pan. Bake at 350* for about 35 minute Good with cream cheese frosting.
