My roommate made these yummy crabcakes for dinner - from a modified Cooking Light recipe. We try to keep pretty healthy - so this recipe doesn't have mayo and we replaced 2% milk with lite soy milk.
Ingredients:
1 lb lump crabmeat, shell pieces removed
1 1/3 c fresh breadcrumbs (for mixture)
1/3 c minced green onions
1/3 c chopped fresh parsley
2 tbsp lemon juice
1 tbsp 2% milk (we used lite soy milk instead)
1 tsp hot sauce
1/2 tsp salt
1/4 tsp pepper
4 egg whites
1 1/3 c fresh breadcrumbs (for dredging/coating)
2 tbsp olive oil, divided
Directions:
1. Combine first 10 ingredients in a bowl and stir well. 2. Divide crabmeat mixture into 8 equal portions. 3. Place 1 1/3 c breadcrumbs into a shallow dish. 4. Dredge crabmeat portions in breadcrumbs and shape into patties. 5. Heat 1 tbsp oil in large nonstick skillet over medium-high heat. 6. Add 4 patties and cook each side until golden (~3 min each side). 7. Repeat with remaining 1 tbsp oil and 4 patties.
