I was looking for a different way to prepare kielbasa and found this recipe in an old Yankee Magazine. Very tasty and very filling! Ingredients:
4 potatoes |
1 1/4 cups butter |
1/4 cup half-and-half |
1 medium onion |
1 (16 ounce) package sauerkraut (drained) |
1 lb shredded farmer cheese |
3 eggs |
1 (16 ounce) package phyllo dough |
1 lb cooked kielbasa |
salt |
pepper |
Directions:
1. Preheat Oven to 350. 2. Peel and boil the potatoes until tender. 3. Whip with 1/4 cup of butter and the half-and-half. 4. Set Aside. 5. In a small pan, melt 1 stick of butter and cook onion until tender. 6. Add sauerkraut and heat through. 7. Set Aside. 8. Mix farmers cheese with eggs in a small bowl. 9. Set Aside. 10. In a pan or microwave, melt 1 stick of butter. 11. Layer 2 sheets of phyllo dough in a greased 9x13 baking dish. 12. Brush phyllo sheets with melted butter. 13. Layer 1/3 of the mashed potatoes, 1/3 of cheese mixture, 1/3 of sauerkraut mixture, and top with 1/3 of thinly sliced kielbasa. 14. Top with 2 more sheets of phyllo. 15. Repeat layering 2 more times, making sure to butter all phyllo sheets. 16. Top with 2 more sheets of buttered phyllo. 17. Bake for 30 minutes until golden brown in color. 18. Cut into squares and serve. |
