Refried Beans the easy (but tasty) Way |

These are the very quick, easy and tasty beans. A fast side dish that you can have ready in about 10-15 minutes. Ingredients:
1 (15 1/2 ounce) can black beans, undrained |
1 tablespoon olive oil |
1/4 small onion, diced |
2 cloves garlic, minced |
salt and pepper |
2 tablespoons crumbled fresh cheese or 2 tablespoons shredded monterey jack cheese |
Directions:
1. In a bowl, mash beans with fork or spoon. 2. Heat oil in a skillet on medium. 3. Add onion and garlic to skillet and cook until tender. 4. Add beans, salt and pepper and cook, stirring often, until bean liquid starts to evaporate. 5. Reduce heat and simmer until desired consistency, about 5 minutes. 6. Serve with cheese over the top. |
