A cool and refreshing vegetable salad. A great way to use up that summer crop!
Ingredients:
3 cups thinly sliced cucumbers
3/4 cup red onion, diced
1/2 cup green pepper, diced
1/2 cup sweet red pepper, diced
1/2 cup yellow pepper, diced
1/2 cup cider vinegar
2 tablespoons sugar
Directions:
1. Mix the cucumbers, onion and peppers in a bowl.
2. Combine vinegar and sugar and mix well.
3. Pour over vegetables and toss to coat.
4. Chill.
