Easy to make low calorie salsa that is great with fish tacos.
Ingredients:
1/2 bunch fresh spinach, minced
1 cucumber, cubed
1 tomato, cubed
1/2 small red onion, cut into 1/4-inch pieces
2 cloves garlic, minced
1 lemon, juiced
1/4 cup olive oil
1 teaspoon sea salt
1 teaspoon ground black pepper
Directions:
1. Mix spinach, cucumber, tomato, red onion, garlic, lemon juice, olive oil, salt, and black pepper in a large bowl. Cover with plastic wrap and refrigerate, 1 hour to overnight.
