A Reduced Cal/fat version Zucchini Muffins
Ingredients:
1/2 cup grated zucchini
1/2 cup applesauce
1/4 cup splenda
1/2 cup egg substitute
1 tsp vanilla
3/4 cup whole wheat flour
3/4 cup all purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon
1/2 tsp nutmeg
3 tablespoon raisins
Directions:
1. 1. Preheat oven to 350,
2. 2. Mix all ingredients together.
3. 3. Fill greased muffin tins about 2/3 full.
4. 4. Bake for 20 minutes.
