Another great salad and a way to use up that holiday turkey. I love this recipe and don't mind it every holiday season when I have leftover turkey.
Ingredients:
2 tablespoons red wine vinegar
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/4 cup extra virgin olive oil
1 head romaine lettuce chopped into 1 pieces
1 can water chestnuts drained and rinsed
2 cups cooked turkey chopped
1/2 cup green olives sliced
1/2 red onion cut into 1/4 pieces
2 cups fresh curly parsley coarsely chopped
Directions:
1. Place vinegar in a large salad bowl. 2. Add salt and pepper. 3. Slowly add oil in a steady stream whisking to emulsify. 4. Add remaining ingredients to bowl and toss well to combine.
